When grape growers cross pollinate several types of grapes, they create a hybrid. These are usually crossings of vitis vinifera, or the common wine grape, with an American variety. Common hybrids include Cabernet Doré, Chardonel, and Marquette. These grapes can be more resistant to cold and pests.
Acidity
Acidity in wine is the level of acid that the wine contains. Wines with more acid in them taste more tart or sour.
