White grapes can be used to produce white wine. White wines are wines that lack any red pigmentation and come in hues of yellow, straw, or almost clear. Most red grapes can also be used to make white wine as long as the wine maker keeps the juice off the lees. Although rare, these wines can be just as high in quality as their white grape counterparts.
Acidity
Acidity in wine is the level of acid that the wine contains. Wines with more acid in them taste more tart or sour.
