Ex-cellars refers to the costs of loading wine and shipping it to buyers during en primeur. In Bordeaux, en primeur happens when buyers purchase wine before it has been bottled. After aging, when the wine is ready to ship, all costs related to getting it to the buyer are called ‘ex-cellars’.
