The term decant means to pour a bottle into another container, usually a decanter. Decanting wine serves two functions. First, it allows a person to remove sediment from the wine. Second, it gives wine the space and time for aeration, which is the process of allowing air and oxygen to interact with the wine. This creates a mellowing of tannins and gives some wines time to open up their aromas.

Acidity in wine is the level of acid that the wine contains. Wines with more acid in them taste more tart or sour.
