When wine tasters describe astringency, they’re talking about the bitter and chalky feeling that coats your mouth after drinking red wine. The more tannin a wine has, the more astringent it will taste. 

Astringency comes from the compounds and tannins extracted from the skins and seeds of the grapes. These compounds, known as phenols, have bitter components that also have known health benefits.
