The wild yeast Brettanomyces, also known as brett, can enter a wine naturally. It creates an aroma referred to as ‘horse blanket’. Some winemakers, especially in France’s Rhone region, allow a small amount of brett to give their wines a unique character.

Acidity in wine is the level of acid that the wine contains. Wines with more acid in them taste more tart or sour.
